So I recently bought a 72 Cougar with a 351 Cobra Jet and a Toploader. The Marty report that came with the car states that there where only 66 made with that engine and transmission in 1972. How manny could possibly be left? Does anyone else on this forum know of any?

If your Marti Report (note correct spelling) shows 66 that applies to the body code - for example, if you have a standard Cougar hardtop it does not include XR-7 hardtops, standard convertibles, or XR-7 convertibles. The number only applies to your vehicle. There will be more if all body codes are considered.
To add to what Royce said, Cougar By The Numbers shows 259 built with that engine / transmission in all bodystyles for 1972.
Still pretty rare!
