Looking for the type of paint used on the grills and trim for my 1970 428CJ Eliminator.

I use SEM Trim Black. Available in aerosol, quarts and gallons.

Is there a sheet that targets specific areas of the engine bay as far as what gets painted and what color?

No there is not. Basically you need to examine photographs of similar cars from the same plant.
