They insured for twiced what I paid for car. Happy with what I pay.
I can part my interior out for more than what I paid for the car.
Many classic car insurers will not permit daily driving of the cars they insure. Be sure to know their restrictions before you end up having a claim denied. I would try to get agreed-value coverage if the company allows for daily driver use, but be sure to understand how they define that.
If you use a regular insurance company, have the car appraised and stay on top of values for cars in the same condition as yours. If the car is totalled, that information may get you a better settlement.
