I think it would be better if you use both sides. Just using the one may look odd and you will not be able to use the dash face pad from your original set with the aftermarket one.
Another options modifying the xr7 cluster but your are restricted to its layout of gauges.
Guess you could use both sides and just put a round LED in the middle of those indents for the XR7 style switches to use for the turn signal, high beam, brake, etc lamps?
I total agree that analog gauges are better than dummy lights. I’d see if the bezel can be purchased separately. Then you would be free to buy gauges of your choosing. Even vintage gauges if so inclined.
When you are on the Summit site for this cluster click on the CHECK THE FIT button. It says that it is for a base model Cougar. So you should be good if you go this route. You might also want to check out Dakota Digital for their clusters.

My dash pad is virtually non-existent and the plastic cap that was used is warped.
I figured that if I had to tear into the dash I might as well do an upgrade.
I looked on the Dakota Digital website and they had nothing listed for Cougar. The clusters were all for Mustangs.
Yes this is the only off the shelf option for cougars that I am aware of. I searched a ton before doing mine. You can get them without the gauges too so you can choose your gauges yourself if desired. Dakota will build you one or modify the original but its very very costly.
Just as a comparison here is the xr7 cluster I modified with a full set of gauges from speedhut. These gauges have warning light you can program for high/low ranges. Low fuel light, high coolant temp etc. Turn signals retained in original spot. No brake light but if concerned can but installed easy enough. I felt this to be a little better option then the aftermarket pierce as it fits the look I was shooting for but I lucked out finding a cheapish xr7 cluster. Just another idea to consider
